A dish inspired by the Italian regional tradition: Sardinian gnocchi with tomato and sausage are
a pasta dish topped with a rustic sauce and lots of good seasoned pecorino.
Simple ingredients and an easy recipe for a tasty family lunch!
400 g of Gnocchetti Sardi, 400 g of tomato pulp, 1/2 onion,160g of sausage, saffron,
some basil leaves, extra virgin olive oil, grated pecorino, salt.
Firstly the sauce. Peel the onion and finely chop it. Let it dry on low heat with extra virgin olive oil
in a saucepan, for a couple of minutes. Peel the sausage, cut it into chunks and add it to the onion.
When the sausage is well browned, add the tomato pulp and continue cooking for about ten minutes,
stirring occasionally. Add the saffron, salt and basil leaves washed and chopped with your hands.
Stir and cook for 5-6 minutes over low heat. In the meantime, boil the gnocchi in abundant salted
water for the time indicated, drain them leaving them quite wet and transfer them into a serving bowl.
Season with the sauce and plenty of grated pecorino.
